Cellar and wines

"On both sides there are loggias, which at the ends have two dovecotes, and beneath them are spaces for making wine... and other rooms for the use of the Villa."
Thus Andrea Palladio in 1570 described the organization of the Villa in The Four Books of Architecture. Since then, the fruits of the vine have always been a central part of villa life and a source of joy and pride for its owners.



The Cellar
In the organization of the spaces, the architect from Vicenza had planned “the places for making wine” beneath the elegant loggias, and there they remained for three centuries, until around 1850, when the Giacomelli family, recognizing the vocation of the Asolo hills for producing excellent wines, decided to expand production and built the current cellar adjacent to the Villa.
The grapes for the historic cellar are grown according to the principles of eco-friendly integrated pest management on 30 carefully selected hectares of vineyard, located in the heart of the 230-hectare estate surrounding the Villa.
The vineyards are planted at high density to ensure a low yield per vine. Special care is taken to maintain the ideal ratio of 1.2 square meters of leaf surface per kilogram of grapes produced.
The traditional varieties—Merlot, Cabernet, Chardonnay, Prosecco, Manzoni Bianco, and Verduzzo—are hand-harvested and rigorously selected, then processed with great care and attention under the supervision of Dr. Donato Lanati, researcher and professor at the University of Turin, to produce elegant wines that reflect the character of the highly suited northern Veneto region.
Prosecco
Prosecco, born in the historic Montello and Colli Asolani DOC, is a wine of particular aromatic finesse and a pleasantly structured palate. Since 2010, it has been recognized as Asolo Prosecco DOCG Superiore, honoring a long tradition of outstanding quality.




White wines
The grapes, carefully harvested at full ripeness and meticulously selected before pressing, give our white wines their intense, deep aromas and beautiful structure. They pair perfectly with fish, white meats, and risottos—and when opened in the evening, they can brighten even the toughest of days.
Red wines
Our red grapes are nurtured with special care and passion throughout the entire ripening process. Hand-harvested at the optimal moment, they are patiently and attentively processed in the cellar, and the wine is allowed to age calmly for as long as each variety requires. The result is elegant, intense, and well-structured wines that embody the distinctive character of Montello and the Colli Asolani.



Dessert wine
From the Villa’s oldest vineyard (1950), everything you need to perfectly accompany traditional Venetian desserts. A late harvest of our Verduzzo grapes has given this wine intense aromas with notes of honey and caramel.
