Carménère is an ancient variety of Cabernet Franc that was largely diffused in the Montello e i Colli Asolani area and in all the Treviso province.

Description

 

Carménère is a well structured red wine, with an intense colour, a fine and spicy bouquet and a complex and elegant structure thanks to the full maturity at which the grapes are harvested, to the careful choice of the grapes during harvest, and to the long ageing in wood.

Vinification Vinification is separate for each veriety and vineyard. Maceration with skins for 10-12 days with frequent pumping over. After ageing choice of the wines for the assemblage and bottling.

In oak casks and barriques for 18 months, then at least 12 months in the bottle
